About Food X-Ray

Pick a food and a centrifuge separates a 100 g sample into what it is made of: water, protein, fat, sugars, starch, fiber, ash (minerals) and alcohol. Each part is poured into its own vessel and labelled with its weight in grams.

Where the numbers come from

Every number is a published USDA value: FoodData Central, SR Legacy (April 2018) and Foundation Foods (April 2026). Each food is one fixed USDA record; its ID is in the page link. "n/a" means USDA did not measure that part for this food. "Other carbs" is carbohydrate USDA reports without splitting it into sugar, starch and fiber.

What the picture is and is not

The layers settle in order of their real density (minerals at the bottom, oil and alcohol on top). Each vessel is sized so its 100 g fills the same volume as in the sample tube. The centrifuge, the colours and the shapes are an illustration; a real lab would need chemistry, not just spinning, to pull these apart.

数字从哪里来

所有数字都是 USDA 公布的数据:FoodData Central 的 SR Legacy(2018 年 4 月)和 Foundation Foods(2026 年 4 月)。每样食物固定对应一条 USDA 记录,编号在页面链接里。「未测」表示 USDA 没有测这一项。「其他碳水」是 USDA 只给了总量、没有细分成糖、淀粉、纤维的碳水化合物。

画面是什么、不是什么

各层按真实密度从下到上沉降(矿物质在最下面,油和酒精在最上面)。每只器皿的大小都让 100 克装进去的体积和在离心管里一样。离心机、颜色和形状是示意:真要把这些成分分开,靠离心不够,要用化学方法。
